Portuguese Sausage Soup

Ingredients:
  • 1lb good Italian Sweet Sausage (or use a mix of hot and sweet for a spicier dish)
  • 1 large carrot sliced
  • 1 medium onion, chopped
  • 3 celery stalks with leaves, sliced
  • 3 large potatoes cut into cubes or 1 lb. macaroni
  • 1 28 oz can tomatoes, undrained
  • 1 15 oz can kidney beans, undrained
  • 1/4 cup sliced, pitted black olives
  • 2 cloves garlic minced
  • 1 tsp anise
  • 1/2 tsp fresh ground pepper 
Directions:

Buy the sausage in bulk, or remove the meat from the casings.  Crumble the meat into a large pot and saute over medium heat until browned, about 5-6 minutes.  Drain the fat.  Add remaining ingredients and 5 cups of water.  Bring to a Boil, reduce to low and simmer for 30 minutes or until all the vegetables are tender.
