Endive Salad With Walnuts and Blue Cheese

Ingredients:
  • 1-2 heads endive
  • 1/3 lb crumbled blue cheese
  • 6 oz walnuts
  • 3 TBS maple syrup
  • seeds from one pomegraite
  • 1/4 cup olive oil
  • 4 TBS balsamic vinegar
  • salt and pepper 
Directions:
  •  Seperate and wash and dry leaves of endive
  • Toss walnuts in maple syrup and toast under broiler for 5 minutes being careful not to burn
  • Begin stacking endive leaves and scatter walnuts, blue cheese, and pomegranite seeds while stacking in an upward pile
  • Prepare vinagrette by whisking together olive oil and balsamic vinegar and salt and pepper
  • Drizzle dressing over stacked endive
  • Serve
