Kathleen's Buckeye Candies/Cookies

Ingredients:
  • 18 oz peanut butter (Jiffy Crunchy preferred)
  • 5 cups powdered sugar
  • 1 cup butter
  • 1 1/2 tsp. vanilla extract 
  • 2 packages chocolate chips (60% cocoa)
  • 2 oz unsweetened chocolate
Directions:
  • Mix together peanut butter, powdered sugar, butter, and vanilla (hand mixer or kitchen aid)
  • Chill mixture in refrigerator for about an hour or more
  • Line a baking sheet with wax paper or parchment paper (that will fit in your freezer)
  • Roll into balls about 2 tsps in size
  • Freeze til firm 
  • Melt chocolate chips and unsweetened chocolate (use double boiler so do not burn)
  • Dip balls into chocolate using a turkey needle or tooth pick
  • Put back in freezer til firm
  • Serve...can be served frozen, cool, or at room temperature
