Split Pea Soup

Ingredients:
  • 1 lb dried split peas, rinsed
  • 3 TBS olive oil
  • 1TBS butter
  • 1 left over ham bone (can substitute 2 slices bacon diced)
  • 1 large onion, chopped
  • 1 stalk ceery diced
  • 2 carrots peeled and diced
  • 1 bay leaf
  • 8 cups cold water or chicken broth or combination 
  • 1 potato peeled and diced (optional)
  • croutons for serving (optional)
Directions:

 

  • Melt butter and olive oil in bottom of saucepan 
  • Add onion, celery, carrots, and bay leaf (if using bacon add bacon now) saute about 5 minutes til soft
  • Add potato if using
  • Add split peas and ham bone
  • Add water or chicken stock
  • Cook 3 hours , simmering uncovered on stove top
  • Using a mixing wand if you have one puree soup to desired texture
  • Can use a blender or food processor to blend about 1/2 mixture to puree or create desired texture
  • Can serve with croutons
