Black Beans and Rice

 An inexpensive staple...healthy versatile and nutricious.

Ingredients:
  • 1 and 1/2 cups dried black bean soaked over night or 2 16 oz cans black beans drained and rinsed
  • 1 onion diced
  • 2 bay leaves
  • 1-2 fresh jalapeno peppers or 1/4 tsp cayenne pepper
  • 3 TBS vegetable oil
  • 2 tsp ground cumin
  • 4 cloves garlic minced
  • 1 TBS white vinegar
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • fresh lime to serve with
  • fresh cilantro for garnish
  • 1 and 1/2 cups brown (or white) rice cooked
Directions:
  • In a separate pot follow directions on box for 1 and 1/2 cups brown or white rice
  • Heat a skillet with oil
  • When hot add onions and bay leaves and cook about 8 minutes til caramelized
  • Discard bay leaves
  • Add garlic, jalapeos, cumin and cook 3 minutes more
  • Add beans and combine
  • Add rice and vinegar and combine and heat through
  • Serve with fresh lime wedges and fresh cilantro to garnish
