Chicken Oreganata

 This is a favorite fool proof quick and easy recipe.  It is inexpensive, good left over, and smells wonderful while baking.  A classic dish you can make over and over.

  • 1-2 lbs chicken parts
  • olive oil for tossing
  • juice of one lemon
  • 1 tsp dried oregano
  • 3 garlic cloves chopped
  •  optional splash of white wine or vermouth
  • salt and pepper
  • Preheat oven to 400
  • Line a baking sheet with aluminum foil
  • Place chicken parts on foil and season generously with salt, pepper, and oregano 
  • Toss with olive oil to coat chicken and seperate parts to cook evenly
  • Squeeze juice of lemon
  • Add an optional splash of white wine
  • Place in oven for about an hour or when chicken is nicely carmelized and cooked through
