BTL Chicken

 If you love bacon, you'll love this dish!

  • 1 pound skinlees boneless chicken breast, cut intp 2 inch strips and pounded flat
  • 1/3 cup flour
  • 1/4 cup olive oil
  •  container of grape tomates, sliced into quarters
  • 1/4 of chopped onion
  • 1/4 cup white wine
  • 2 cups chicken stock
  • 1/2 pound Applegate Organic Bacon
  • 2 cups arugula
  • a tablespoon dijon style mustard 
  • lightly flour the chicken pieces
  • heat oil and when you see "ribbons" in the pan, carefully place the pieces and cook both sides
  • while chicken is sauting, cook bacon in under a broiler
  • turn both chicken over-when done place both on paper towels to drain off excess oil
  • in remaining oil add tomatoes and onion to pan and cook for 5 minutes or until tender
  • add white wine and chicken stock, stirring constantly and releasing anything left on the bottom of the pan
  • add chicken back, add bacon by crumbling into pieces and mustard and lower heat and cook for another 15 minutes
  • when chicken is done add the arugula for the last 2 minutes, stir in to warm and coat
