Corned Beef and Cabbage

 I always made this dish during the snowboard US Open up at Stratton for a crowd.  It is the simplest and as promised...a crowd pleaser.  Don't wait for St. Patrick's Day!  I like to serve it with pumpernickel rye bread swirl and some mustard.  It is easy to double or triple the recipe.

Ingredients:
  • One 3lb package of corned beef with spice packet 
  • 10 small red potatoes
  • 1 cup baby carrots
  • 1 head cabbage quartered
  • optional 2 bottles dark beer
Directions:
  • Rinse corned beef
  • Place in a large pot and generously cover with beer and water
  • Add spice packet that comes with meat
  • Bring to a boil
  • Simmer about 50-60 minutes til fork tender
  • During last half hour add cabbage, potatoes, and carrots (You can remove the meat but I don't bother) 
  • Slice meat against the grain and serve
