Dumont's Famous Mac and Cheese

 The Dumont Restaurant on Union Ave in Brooklyn, NY has hands down the best mac and cheese.  It's simply the comfort food you crave!

Ingredients:
  • 1 pound of radiatore, elbow or fusilli
  • 2 tablespoons extra-virgin olive oil
  • 2 cups of whole milk
  • 2 1/2 cups of heavy cream
  • 8 tablespoons unsalted butter (1 stick)
  • 1/2 cup all purpose flour
  • 1/2 pound Gruyere cheese
  • 1/2 pound sharp white cheddar, grated, divided
  • coarse salt and freshly ground black pepper
  • 1/4 cup of unseasoned bread crumbs
  • optional 6 slices of Applegate bacon, cooked and crumbled
  • pinch of nutmeg 
Directions:
  •  preheat oven to 400 degrees
  • Bring a stock pot of walted water to boil and cook pasta al dente according to package instuctions, Drain, toss with olive oil in a large bowl, set aside to cool
  • Combine milk and cream in a medium saucepan over medium low hear and bring to a gentle simmer
  • Melt butter in a large heavy bottomed pot over medium heat.  Add the flour and whisk until fully incorporated and mixture is smooth (roux). Cook while stirring for 4 minutes and slowly add the hot milk mixture to the flour.  Bring to a simmer whisking all the time. * you may add the pinch of nutmeg here if desired.  Add half of the Gruyere and half of the cheddar and whisk until all is incorporated. Season to tast with salt and pepper. 
  • Add the cooked pasta and toss well to combine.  Pour pasta into a buttered 9 x 13 inch baking dish or a 3 quart gratin dish.  * Fold in crumbled bacon if desired. Top with remaining cheeses and sprinkle with bread crumbs.  Bak for 20-25 minutes or until golden and  bubbly.  Allow the mac and cheese to rest for 5 minutes before serving.
