Basic Omelette

3 eggs, pat of butter


In a small bowl whisk the 3 eggs with a fork or whisk til well blended. Heat a 6-9 inch skillet, add butter to melt and just bubbling, quickly add liquid egg mixture, continually lift edges of egg as it cooks but always allowing the bottom of the pan to be covered with egg til cooked (you can add any mixture of fillings here but they should be precooked) lower flame..(can also put under broiler for a minute of top is not cooked . Fold and serve.
