Shrimp Marinara

 This is delicious anytime of year and so easy to make.  The hot pepper flakes gives it a little heat.

  • 1 lb raw large shrimp
  • 1 lb linguini
  • 2 cans whole tomatoes (Marzano are the best)
  • 1/2 cup olive oil
  • 1/2 bunch fresh basil
  • handful chopped parsley
  • 1 TBS hot pepper flakes 
  • 1 med onion chopped
  • 8 cloves garlic minced
  • splash white wine (optional)
  • Put on water to boil for pasta  (salt water)
  • Cook pasta el dente and set aside (add splash of olive oil to keep from sticking)
  • First make marinara:heat  in bottom of a sauce pot enough oil to cover bottom 
  • When hot add chopped onion and 4 cloves garlic and 1/2 the fresh basil, and sweat for about 5 minutes (do not brown) Remove wilted basil
  • Add 2 cans of tomatoes that you can pulse first in a food processor, or use a potato masher right in the pot, or squeeze with your hands
  • Simmer for 1/2 hour to an hour
  • In separate large skillet add enough olive oil to cover bottom and heat
  • When hot add 2 chopped garlic cloves and tsp of hot pepper flakes
  • Add shrimp and cook about 3 minutes, turn once (when pink are done)
  • Deglaze with a splash of white wine (cook on high heat til alcohol is evaporated)
  • Add pasta and sauce to skillet and combine
  • Add 2 cloves minced garlic, splash of olive oil and pinch of hot pepper flafes
  • Garnish with fresh basil and parsley 
  • Serve
