Calamari

 This recipe is so easy!!! You just put the flour with a little salt and pepper in a paper bag, add squid, shake to coat, and fry it up!  I like it with some fresh squeezed lemon or a spicy quick tomato sauce for dipping.

Ingredients:
  • 1-2 lbs cleaned squid cut into slim rings (about a 1/4 inch)
  • 1 cup light olive oil
  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder (optional)
  • 3 lemons cut up 
Directions:
  • use a clean paper bag and add about 1 cup of flour
  • add salt and pepper to bag and garlic powder
  • shake to combine
  • Using cleaned squid cut into slender rings
  • Add rings and legs to bag and shake to coat
  • Heat a skillet (cast iron if you have one) and add about 1/2 inch of light olive oil to cover bottom
  • When oil is hot add squid in batches-be sure not to crowd and shake off excess flour before placing in hot pan
  • Cook 2-5 minutes...do not OVER cook because will get tough!
  • Drain on dish with paper towel
  • Serve immediately with fresh squeezed lemons or make a quick spicy tomato sauce for dipping
