Shrimp Ceviche

 One of the best appetizers in Mexico!

Ingredients:
  • one pound of shrimp, raw, cleaned, deveined, shelled (with tails off)
  • 5 limes cut into quarters
  • 3 cloves of garlic, crushed
  • 1/4 swett onion, chopped
  • 1/2 mango chopped
  • 1/2 chopped avacoda  
  • small bunch of fresh cilantro (about 6 sprigs) chopped 
  • salt and pepper to taste
Directions:
  • totally rinse shrimp, pat dry, chop until 1/4 inch pieces and set aside in refrigerator
  • chop all ingredients place in a bowl
  • squeeze fresh lime juice over the ingredients
  • add raw shrimp to the mixture turning frequently and adding more limes if needed
  • salt and pepper to taste
  • when the shrimp turns white, it's "cooked"
  • serve with tostados
