Chiles Rellenos

Ingredients:
  • 12 Ancho chilies
  • 2 large tomatoes
  • 1 medium onion
  • 2 garlic cloves crushed
  • 4 eggs separated
  • 3 tablespoons flour
  • 8 tablespoons oil

For filling

  • 12 oz. ground beef
  • 1 potato
  • 1/4 onion
  • 1 small tomato
  • 12 pitted olives
  • 2 tablespoons oil
  • salt and pepper 
Directions:
  • Toast chiles, put into a plastic bag and "sweat" the skin off, peel and slice down the middle removing the seeds
  • Peel carrot and potatoes, par boil and chop into a small dice
  • toast and chop tomato
  • brown meat in oil, with onion, garlic , drain fat and add veggies
  • fill the chilies with the meat mixture
  • beat the egg whites until stiff and fold into beaten egg yolks
  • dredge chilies lightly with flour and dip into egg mixutes
  • fry in hot oil, turning gently and keep warm in an overproof dish lined with paper towel
  • serve with warm salsa made with tomatoes and garlic 
  • remove paper and pour salsa over the chilies
