Sayulita Shrimp Burger

 While down at Sally's place  in the lively surf town of Sayulita, Mexico, I fell in love with these local shrimp burgers.  They were so good I devised a recipe of my own.

  •  1 lb medium raw shrimp
  • 1 egg
  •   1 small onion diced
  •   3 scallions diced
  •  2 cloves garlic minced
  • 1 stalk celery diced small
  • 1/4 cup chopped green pepper or poblano chili
  • 2 TBS chopped fresh cilantro
  • 1/8 tsp cayenne
  • 3/4 cup breadcrumbs
  • salt and pepper
  • 2 TBS butter
  • 6 hamburger buns
  • optional guacamole to serve with, sliced tomatoe, lettuce
  • Saute onion, garlic, scallions, green pepper, and celery in 1 TBS butter til wilted maybe 5 minutes
  •  Coarsley chop shrimp
  • In large bowl combine shrimp. egg, warm sauteed onion, etc, cayenne, and bread crumbs, salt and pepper
  • Use more breadcrumbs to make firmer if you need.  Form into 6 patties and refridgerate to make firmer
  • Melt 1 TBS butter in skillet and add shrimp burgers.  Shrimp will turn pink when done.  
  • Toast hamburger buns
  • SErve with guacmole lettuce and tomato optional
