Saffron Rice

Saffron is an exotic and expensive spice made from the stamen of a certain crocus.  It what turns the rice yellow.  This special rice is delicious with osso bucco, or veal stew. It makes a beautiful presentation. 

Ingredients:
  • 2 cups long grain rice
  • 1 onion diced
  • 3 TBS butter
  • 6 TBS olive oil
  • 1 cup white wine (optional)
  • 2-3 pinches saffron stems
  • 2 cups chicken broth
  • 1 cup water
  • 1 tsp salt
  • 1/2 tsp pepper 
Directions:
  • Add saffron threads to 1/4 cup hot water and let sit for atleast 5 minutes
  • Melt butter in large skillet
  • Add olive oli
  • Saute diced onion about 5 minutes
  • Add rice
  • Add wine (can substitute water and just skip this step)....let simmer til alcohol is evaporated about 10 minutes
  • Add chicken broth and water
  • Season with salt and pepper
  • Bring to a boil and then lower heat to simmer and cover about 15 minutes or until liquid is absorbed.
  • Serve
