Fancy Quinoa

 I made this for my son Jack who loves to eat healthy and stay fit.  Quinoa is a live grain and delicious.  The toasted pine nuts add great texture and flavor.

  • 2 cups quinoa..follow directions on box..and set aside when done
  •  1/4 cup olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 head brocoli steamed and chopped
  • 1/2 cup pine nuts toasted
  • 1 large tomatoe diced or small can diced tomatoes
  • fresh basil for garnish (parsley or cilantro)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Make 2 cups quinoa...can use chicken broth instead of water or keep it vegetarian with water.  Set aside
  • In a large skillet add olive oil and heat
  • Add onion, garlic and saute 5 minutes
  • toast pine careful not to burn
  • Add quinoa to pan and toss with brocoli and tomatoes, pine nuts, salt and pepper
  • Garnish with basil
