Greek Salad

 Greek salad is a classic.  Everyone loves it in my house.  It can be a delicious first course or a meal in itself.  It pairs well with fish, cicken, and lamb.

Ingredients:
  • 1 large head romaine r a combination of greens like bib, arugula, iceburg..cleaned shredded
  • 1/4 green or red pepper diced
  • 1/2 cucumber peeled and diced
  • 1/2 onion diced 
  • 1 small clove garlic minced or through a garlic press
  • 1/4 lb feta cheese crumbled
  • hand full of Greek olives (calamata)
  • 1/4 cup god olive oil
  • 3 TBS red wine vinegar
  • 1/4 tsp salt and pepper
  • fresh oregano, dill or mint or both about a tsp each chopped (substitute dried oregano about a 1/2 a tsp)
Directions:
  • In a large salad bowl pour olive oil, vinegar, salt and pepper and whisk together
  • Add lettuce, peppers, cucumber, dill, onion, garlic, and feta
  • Toss all together before serving
