Chi Chi Pasta

 This is a Sarnataro classic family pasta dish.  It is what I grew up with.  It is what we all make when we are too tired to cook or go food shopping because all you need is a can of chick peas, some garlic, pasta, olive oil, and parsley.  It is cheap, vegetarian, healthy and everyone loves it.

Ingredients:
  • One can chick peas
  • 1 lb. shaped pasta like ziti
  • 1/4 cup olive oil 
  • 4 cloves garlic minced
  • 1 tsp red pepper flakes
  • 4 TBS chopped fresh parsley
Directions:
  • Cook pasta el dente, drain add some olive oil and salt to prevent sticking and set aside
  • In bottom of saucepan add enough olive oil to cover bottom of panabout 1/4 cup
  • Saute minced garlic with red pepper flakes about 5 minutes on medium heat (do not brown)
  • Add can of chick peas and heat through
  • Combine with pasta and serve garnished with some more fresh parsley, pepper flakes, and a splash of extra virgin olive oil
