Matzo Ball Soup

 This is undeniably my son Jack's favorite soup!!  He cannot get enough of it!  It is the ultimate comfort food and a must if you are or a loved one is under the weather!  It is a classic Jewish soup

  • one whole chicken
  • 3 carrots peeled and sliced into discs
  • 2 stalks celery
  • 1 lage onion
  • 3 cloves garlic
  • 1 parsnip
  • 1 turnip
  • 1 sprig fresh dill
  • 1 cup matzo meal
  • 1/4 cup vegetable oil or rendered chicken fat
  • 3 TBS seltzer
  • 5 eggs 
  • 1/2 lb noodles boiled seperatly and added into soup when serving
  • Place cleaned chicken and with innards in large soup pot and cover with water
  • Add whole onion (can leave skin on), garlic, carrots, celery, parsnip, turnip, and dill
  • Simmer for about 2 hours skimming off foam
  • Remove chicken and vegetables and strain through a seive or cheese cloth
  • Skim off fat on top
  • Remove chicken meat and reserve to eat with soup or use for another dish like chicken salad
  • Return carrots to soup
  •  Make matzo balls...beat 5 eggs with vegetable oil, add matzo meal and seltzer, combine and refrigerate atleast 15 minutes
  • Form into balls and place in boiling water for about 25 minutes in covered pot.  Remove and place in soup when serving with a portion of noodles, chicken meat, and some fresh dill for garnish
