Asparagus soup
  • 2 Bunches of Asparagus
  • Olive oil
  • 1 Large yellow onion
  • 2 Cups of Vegetable stock or chicken stock
  • Milk or cream (if desired)
  • Slice the onions
  • Clean the asparagus and break into peices.
  • Saute the onion in olive oil until soft.
  • Add the asparagus and saute.
  • Add the stock and simmer for a few minutes.
  • Let the ingredients cool before you put them in the blender to puree (in batches) or put the soup in the pot to use an emersion blender to puree.
  • Add milk or cream if so desired (or a little squeese of lemon for a fresh bright taste, but the lemon may not mix well with the dairy so you might choose one or the other... just a tiny squeese won't hurt though ) and heat before serving.
  • Salt and pepper to taste
