Ingredients:
- 2 Bunches of Asparagus
- Olive oil
- 1 Large yellow onion
- 2 Cups of Vegetable stock or chicken stock
- Milk or cream (if desired)

Directions:
- Slice the onions
- Clean the asparagus and break into peices.
- Saute the onion in olive oil until soft.
- Add the asparagus and saute.
- Add the stock and simmer for a few minutes.
- Let the ingredients cool before you put them in the blender to puree (in batches) or put the soup in the pot to use an emersion blender to puree.
- Add milk or cream if so desired (or a little squeese of lemon for a fresh bright taste, but the lemon may not mix well with the dairy so you might choose one or the other... just a tiny squeese won't hurt though ) and heat before serving.
- Salt and pepper to taste
