Tomato Bisque Soup

Ingredients:
  • 1 large can of peeled tomatoes,
  • 1 large can of tomato puree,
  • 1 small chopped onion,
  • 2 carrots peeled and chopped,
  • a clove of garlic
  • 1 cup of chicken stock,
  • 1-2 cups milk or half and half,
  • 2 tablespoons pesto
  •  shredded cheddar cheese for garnish
Directions:
  • Chopped, onion, carrots, garlic and canned tomatoes and saute in the stock pot until tender
  • Add chicken stock and let cool and blend with the hand blender
  • Add tomato puree and cream and blend
  • Turn the heat to low and cook for 20 minutes
  • Garnish with pesto and cheddar
