Butternut Squash Soup the easiest ever!
  • 2 packages of cut and clean butternut squash
  • 1/2 cup vermont maple syrup (or store brand if you must!)
  • 2 cups chicken stock
  • 2 cups milk or cream
  • salt and pepper
  • place squash on a roasting pan and pour 1/2 of maple syrup over it.
  • Cover with foil and place in over and roast until tender
  • Put squash in stock pot with chicken stock and blend with hand blender
  • add cream as desired
  • Season with salt and pepper to taste
