Grilled Zucchini Roll-Ups

Ingredients:
  •  4 small zucchini
  • 2 tablespoons olive oil
  • 1/2 cup of goat cheese
  • 1 tablespoon fresh chopped dill
  • 1/2 teaspoon lemon juice
  • 20 arugula leaves
  • salt and pepper
Directions:
  • wash zucchini and slice lengthwise into thin strips
  • brush with oil and grill on both sides until tender
  • add  and mix dill, lemon juice and salt and pepper to the goat cheese and set aside
  • lay out  grill zucchini on a platter
  • place 1/2 teaspoon of cheese mixture at one end and one arugula leaf on the other end and roll up
  • place seam side down on the platter
  • repeat until all zucchini is used
  • refrigerate until ready to use
