Ingredients:
  • olive oil
  • 1 Onion
  • 1 Eggplant
  • 1 Zucchini
  • 1 Red or green pepper
  • 2 cloves of garlic
  • 1 can whole romano tomatoes ( or use fresh, but you should first peel them by quickly submerging them in boiling water)
  • Rosemary
  • Fresh parsley
Directions:
  • Cut and slice the vegetables the way you want them. It is good to slice the egglant the round way, then cut these in lengths then again for cubes. 
  • Add the olive oil to the skillet and heat.
  • Add garlic, ... then the peppers and onions and saute.
  • Then the eggplant and let them sizzle a bit.
  • Then add the zucchini and tomatoes and rosemary. Simmer for few minutes until the zucchini is cooked and the flavors are blended.
