Margie's Lettuce Wraps

 This recipe is delicious and vegan.  Low in calories and big on nutrition.  Fun to eat.

  •  1 head iceberg lettuce
  • 1 package extra firm tofu
  • 1 bottle peanut sauce
  • 1 teaspoon wok oil
  • 1/4 head red cabbage
  • 6 large carrots
  • 1 package bean sprouts
  • sesame oil -optional
  •  slice tofu in thin strips and drain on a paper towel to push the water out-cut into small squares
  • heat oil in pan and add tofu, browning lightly
  • while tofu is browning, cut cabbage and carrots in thin small slices
  • wash lettuce and pull apart in individual pieces
  • take tofu off the stove, place in a bowl and toss with the peanut sauce
  • make wraps by adding tofu and veggie into the lettuce pieces
  • add sesame oil if desired-this will make them spicier
