Pasta Puttanesca

Ingredients:
  • 2 large cans of plum tomatoes
  • 1/4 cup of oil oil
  • 1 tsp dried oregano
  • 2 dashes dried pepper flakes
  • 1.2 cup of pitted black olives
  • 1.4 cup drained capers
  • 4 garlic cloves
  • 8 anchovy fillets chopped or 1 tbsp anchovy paste
  • 1 lb pasta, salt and pepper
Directions:
  • drain tomatoes and cut crosswise.
  • In a large saucepan, bring oil and tomatoes to a boil, reduce the heat and add remaining ingredients except pasta.
  • Cook sauce for 25 minutes at a simmer.
  • Turn water in stockpot to high, bring to boil and add pasta
  • When pasta is done, drain, put on a platter and pour puttanesca sauce over pasta.
Serves:serves 6-8
