Cindy's Stuffed Peppers

 4 peppers with top cut off and seeds and ribs removed (any color)

1 lb. ground lamb (you can substitute ground beef or veal or pork or any combination)

1 egg

2 cups cooked rice

1 28 oz can ground peeled tomatoes

3 TBS olive oil

2 cloves chopped garlic

1 small onion chopped

2 TBS honey

salt and pepper 


 1.  First make the sauce....saute onion and garlic in olive oil add tomatoes and honey

2.  Combine ground lamb with egg,  1 cup of the cooked rice and salt and pepper.

3.  Stuff peppers with meat mixture.. and place tops back on top of peppers (you can make meatballs with any leftover meat and place in sauce).

4.  Pour sauce over stuffed peppers in an oven ready pan 

5.  Bake at 350 for 11/2-2 hours til peppers are tender

6.  Serve with extra rice
