Roasted Beets

 This is a great way to make beets.  Serve them warm with a little butter, salt and pepper or cold in a salad.

Ingredients:

Bunch of fresh beets skin on

2 TBS Olive Oil

Salt and Pepper

Directions:

1.   Cut the beet tops off leaving about 3 inches of stem.

2.  Place beets in tin foil and drizzle with olive oil, salt and pepper.

3.  Close tin foil and roast for 2 hours for large beets.

4.  When cool enough to touch....peel (you can use rubber gloves to avoid staining your hands).

5. Serve warm as a side dish or can cool and put on salads.
