Angel Food Cake
  • 10 to 13 egg whites (1 1/2 cups or a little more) room temperature
  • 1 cup sugar
  • 1 cup cake flour, sifted
  • 1 tsp cream of tartar
  • 1 Tbsp Vanilla
  • Heat oven to 345
  • Sift the flour  and sugar together 3 or 4 times
  • Beat the egg whites and cream of tartar until soft folds appear
  • add the vanilla and beat until the egg whites hold soft peaks not stiff
  • fold the sifted flour and sugar mixture into the egg whites a little bit at a time. Fold the flour in just until thoroughly mixed and then add more and repeat. You do not want any pockets of flour. You also do not want to over mix or over work your batter.
  • pour the delicate mix into the cake pan and place in the oven
  • Do not open the door to check on it until time has past and it should be close to getting done
  • Baking time is 50 minute
