Coquille St Jacques Liza's Favorite

 This is my daughter Liza's favorite appetizer.  It is simple to make, decadent, and delicious.  The scallop shells are the most festive to serve this appetizer in and they can easily be found in any kitchen supply store.  You can substitute ramekins if you must.  Bon appetite.

  • 1 lb bay scallops
  • 1 cup flour seasoned with salt and pepper
  • 4TBS butter
  • 1-2 shallots minced
  • 2 bay leaves
  • 1/4 cup white wine (optional)
  • 4 ramekins or large scallop shells
  • 3 TBS breadcrumbs
  • 1/4lb Jarlsberg swiss cheees grated
  • parsley for garnish
  • Dredge scallops in flour seasoned with salt and pepper
  • Melt 3 TBS butter in a large skillet with the bay leaves and minced shallot
  • Drop in the scallops (shake off excess flour) and cook for about 5 minutes on medium heat (can add white wine and cook tiil alcohol is evaporated)
  • Butter scallop shells or ramekins to prevent sticking
  • Pour mixture into each scallop shell
  • Grate swiss cheese over each shell 
  • Sprinkle each serving with breadcrumbs (can add a little butter to crisp up breadcrumbs)
  • Place on baking sheet and place under broiler til cheese is melted
  • Sprinkle with a little parsley and serve
