Turkey Gravy

Ingredients:

 ingredients-drippings, large container of salted chicken stock, 1 cup of cream sherry, 1/2 cup of flour, 1/4 cup of hot water

Directions:

 Take the drippings poured off the turkey and put into a saucepan.  Add a large container of turkey or chicken stock and 1 cup of sherry.  Bring to a boil.  While the liquid is boiling make the thickening agent.  You can do Grandma Jeans technique with the mason jar and shaking the flour with hot water. I found a whisk, bowl, 1/2 cup of flour and hot water works just as well. Whisk the water and flour until you have a smooth paste.  The trick to a non lumpy gravy is adding the flour.  Mix a cup of the hot stock with the paste and whisk again.  The idea is to get it to the same temperature as the stock.  Add paste to the stock and whisk like crazy.  Adjust seasoning
